Enoki Mushrooms

I always started my day with prayer and thanksgiving to God, then a drink of water, and coffee with milk brought to bed by my hubby. He always brought me coffee to bed before I even open my eyes.
For my breakfast this morning here's what I had.

Delicious, Nutritious, and it was pretty easy to make. This was my first time dealing with Enoki Mushrooms and absolutely not the last time because I so love it!
  1. I cooked the salmon in the cast iron pan for few minutes and top it with the mixture of green onions, grated ginger, 2 tablespoon soy sauce, 2 teaspoon lemon juice, and 1 teaspoon sugar.
  2. Enoki mushrooms - I boiled it for few minutes then tossed it with 1 teaspoon Mirin, 1 tablespoon water, and 1 tablespoon soy sauce.
  3. Baby Bok Choy - I stir-fry it with sliced ginger, soy sauce, a pinch of sugar, 1/4 cup water. Simmer for couple minutes then add few drops of sesame oil.

I made this cake last night. Easy to make and so yummy! I believe this is in medium Glycemic Index.  I got to have dessert for breakfast ;)
I finish my breakfast with a cup of green tea. Now my day has officially started. Have a blessed day everyone and Enjoy life!
