We had an opportunity to stop at Seafood City in Tukwila, Washington. I took advantage of the opportunity and bought some fresh vegetables for cooking Pinakbit or pakbit. I miss eating pinakbit since I'm living in an RV full time, a home away from home, I got to do what I have to do (means I have to cook it myself) No friends and no family who can cook it for me. Anyway, I have the all the ingredients needed so I gave it a try and oh it turned out great (in my opinion).

The ingredients: Garlic, Ginger, Onions Meat (I used pork) Squash, Long Beans, Eggplant, Better Melon (Ampalaya), Okra Optional: Sauteed Shrimp Past or Ginisang bagoong |

1. First I brown the meat

2. heat the oil and add garlic, ginger, and onions

3. Add the meat

4. Then add squash and a little bit of water to cook and cook it for few minutes
|
 |
5. Add the long beans and cook it for about 2 minutes or so
|
 |
6. Then add the rest of the ingredients. |

7. Optional: when vegetables are about to cook, I add shrimp paste |
 |
8. Done: I love it! Healthy, delicious, and it reminds me of home in Philippines. My RV life amateur easy cooking skills! |
